Waterford Organic Gaia 1.1 is an Irish single malt whiskey made with 100% organic barley from seven Irish farms. Bottled at 50% ABV, it combines maturation in ex-bourbon, virgin American oak, French oak and Vin Doux Naturel wine casks. Orange zest, figs, malt, seaweed and salted caramel shape the nose. Cloves and pepper bring spice to a palate of cherries and butterscotch, before a long, zesty finish with lingering gentle sweetness.
