Wire Works – Bourbon Barrel English Single Malt

Bourbon Barrel is an English single malt from Wire Works, a vatting of lightly peated malt matured only in ex-bourbon barrels. It is the second release in the distillery's Provenance Core Range. The distillery describes ex-bourbon barrels as a fairly inactive cask type, which lets its own spirit character come through. Mashing, fermentation, distillation and maturation all take place on site. The nose offers vanilla cheesecake, white chocolate, lemon curd, candied ginger, and peaches and cream. On the palate come custard creams, lemon zest, honey and gingerbread, and the finish turns to apple crumble, mint sweets, lime pickle and white pepper.
