Wolfburn – 12 Year Old Single Malt Bourbon & Oloroso Sherry Casks (70cl, 46%)

This is a 12 year old single malt from Wolfburn in Thurso, in the Highlands. It was matured in equal parts hand-selected second-fill oloroso sherry butts and ex-bourbon casks, in the distillery's own dunnage warehouses near the sea. The spirit is distilled twice and has a peat level of 5 ppm, so the smoke stays light. It is bottled at 46%, non-chill-filtered and without added colour. William Smith founded the original Wolfburn in 1821, and the present distillery has been producing again since 2013. The nose pairs sweet floral notes with a fine hint of peat smoke. The palate has honey and burnt sugar with mild spice, and sherry sweetness stays present. The finish is long, leaving dried fruit and caramel.
