Wolfburn – Manzanilla Cask Finish (70cl, 46%)

A Highland single malt from Wolfburn, the distillery in Thurso, Caithness, finished in Spanish oak Manzanilla sherry casks. It is bottled at 46% in a 70cl bottle, at natural colour and without chill filtration. The whisky matures in the distillery's dunnage warehouses before the finish, which adds a dry, vinous character to the spirit. The nose offers golden syrup and cashew nut butter with vinous tones. The palate is oily and rich, with dry Manzanilla notes leading to sultanas, plums and dates, and hints of toffee and honey. In the finish, sweet wine and fruit fade slowly, leaving a little caramel.
