This is a Japanese single malt from Sasanokawa Shuzo, bottled at 55% ABV. It is made from non-peated Asaka spirit matured in first-fill bourbon barrels, then finished for more than a year in first-fill cherry blossom barrels.
The nose brings salted cherry blossom, castella, floral hints, lemon and a distinct earthiness. The palate balances sweetness and acidity, with baby castella cake and cherry blossom cream. The sweet finish lasts a long time and leaves a clean, clear flavour.
