Taisetsu is a peated single malt from Akkeshi Distillery on Hokkaido, released in 2022 as a limited edition. It is the ninth release in the 24 Sekki series, which follows the 24 seasonal divisions of the traditional Japanese calendar. Taisetsu means heavy snow. It is bottled at 55% ABV in a 70cl bottle, natural in colour and not chill-filtered.
The whisky marries spirit from four cask types: Hokkaido Mizunara, ex-bourbon, sherry and red wine.
The nose combines Hassaku orange, mandarin and darjeeling tea with honey, brown sugar and violet. The palate moves from bittersweet citrus to peaty notes of soy sauce, herbs and buttered bread. The finish is long, with white pepper and lime peel.
