Alipus San Juan Mezcal (1L, 47.5%)

Alipus San Juan is a mezcal made from Espadín agave at the Los Danzantes distillery in San Juan del Rio, Oaxaca, and sold in a one-litre bottle. The agave is cooked slowly in underground stone ovens fired with wood, then milled. The extracted juice ferments naturally in open wooden vats and is distilled in direct-fire copper stills. The mezcal is clear and crystalline. The nose is smoky, with touches of fruit, spice and a light earthiness. On the palate it is soft yet complex, finishing long and persistent.
