Allt-a-Bhainne – 13 Year Old 'One Fancies a Sherry' SMWS (70cl, 55%)

This is a 13 year old Allt-a-Bhainne bottled by the SMWS under the name One Fancies a Sherry, in a 70cl bottle at 55% ABV. The whisky spent its first 11 years in an ex-bourbon hogshead before moving into a first fill ex-Pedro Ximenez barrique. The barrique came from a small, privately owned bodega, now in its ninth generation, that works only with the Pedro Ximenez grape. The nose pairs dark chocolate cherry liqueurs with roasted beetroot and goat cheese tart. On the palate there is a creamy jalapeno jam beside toasted flaked almonds, and the finish brings a coffee bitterness.
