Apogee XII is a 12 year old blended malt from Bimber, made from malt whiskies sourced from the Highlands and Speyside. Each was matured for at least 12 years before blending and a further period in ex-bourbon casks that had previously held Bimber's London single malt.
It is bottled at 46.3% in a 70cl bottle, with no colouring or chill-filtration. The glass is hammered to echo the surface of Bimber's small copper pot stills.
The nose brings spiced pears, baked apricot flans, rosewater and nutmeg. Syrupy orchard and stone fruits lead the palate, with lightly charred oak and white pepper, and the finish is lingering, ripe and sweet.
