Baby Jane is a small-batch bourbon from Widow Jane, blended from bourbons distilled in Brooklyn and Kentucky. It is built around an heirloom corn that is also called Baby Jane, developed from Bloody Butcher Red and Wapsie Valley Yellow corn.
The bourbons matured for four to six years in new charred American oak casks. The blend is bottled at 45.5% ABV without chill-filtering, brought down to strength with mineral-rich water from the Rosendale Mines in New York State.
On the nose there is honeycomb, cream soda, a light saltiness and green grapes. The palate brings café au lait, strawberry and cream toffee, salted caramel, fresh fig, allspice and a bitter note of raspberry leaf. The long finish carries stewed peach, star anise, dried hay, horchata, soft pretzel and milk chocolate.
