This is a 15 year old Highland single malt from Balblair, a distillery founded in 1790. It was matured in bourbon casks and finished in first-fill sherry casks, then bottled at 46% without chill-filtering.
The nose recalls an apple strudel, with baked apple, honey, cinnamon and a little cream, plus raisins and dried figs. With time the sherry influence grows. The palate adds toffee sweetness to the apple, turning drier as oak, cinnamon and clove come forward.
The finish is medium to long and gentle, led by apple and cinnamon.
