This is the first release in Barrell Craft Spirits' Cask Finish Series: a blend of 6-year-old straight bourbon whiskeys, finished in Pedro Ximénez sherry casks. It is bottled at cask strength, 57.6% vol, without chill filtration, in a 75cl bottle.
The sherry finish brings dried fruit, toasted spice and syrupy sweetness to the bourbon.
The nose offers fig jam, raisin bread and molasses. The palate moves to baking spice, toffee and dark cherry, and the long finish carries oak spice and dried fruit compote.
