Bimber – 2016/2020 PX Sherry Cask #41 (70cl, 57.9%)

Bimber 2016/2020 is a single malt from the London distillery, distilled in 2016 and bottled in 2020 from a single Pedro Ximenez sherry cask, number 41. It is bottled at 57.9% in a 70cl bottle, and the cask yielded 335 bottles. Bimber was founded by Dariusz and Ewelina, who moved from Poland to the UK in 2003 and opened their distillery in Park Royal, west London. The first casks were laid down on 26 May 2016. The distillery sources all its barley from a single producer and uses traditional floor maltings.
