Harmony of Eight is a 2016 single malt from Bimber, the London craft distillery, bottled at 50% ABV in a 70cl bottle. Bourbon and PX sherry casks are named among its maturation.
Bimber was founded by whisky enthusiasts and works with regional single-farm barley, malt from a traditional malt floor and washbacks made in its own cooperage. Fermentation lasts seven days, and the spirit is distilled in two direct-fired pot stills.
