Apogee XII is a blend of selected malt whiskies from Bimber Distillery, each matured for at least 12 years.
It then received additional maturation in ex-bourbon casks that had previously held Bimber whisky.
The nose has spiced pears and baked apricot flans, sweetened with candy and scented with rosewater, nutmeg and ginger. The palate is syrupy, with orchard and stone fruit, lightly charred oak, white pepper and cooling mint. The finish is lingering, with ripe sweet fruit and aromatic oak.
