Bimber – Bourbon Oak Cask Batch No.3 (70cl, 51.6%)

This is Batch No.3 of Bimber's Bourbon Oak Cask whisky, bottled at 51.6% in a 70cl bottle. It is a vatting of selected ex-bourbon oak casks, married together in a hand-made oak vat before bottling. American white oak is described as adding sweet, rich vanilla and caramel alongside balanced spice to a fruit-forward spirit. The barley is grown on a single farm, then floor malted and mashed by hand. Fermentation runs for seven days in wooden washbacks made at the distillery's own cooperage, and distillation is in small copper pot stills heated by direct fire.
