The second batch of Bimber's ex-bourbon American white oak casks, an English single malt bottled at 52.2% ABV in a 70cl bottle. It is natural colour and non-chill-filtered, and only 2950 bottles were filled.
The fruit-forward Bimber spirit is paired with the sweet vanilla and spice of ex-bourbon casks, bringing flavours of apples, apricots, peaches, caramel and spices.
The nose offers green apple peel, dried stone fruits, milk-soaked breakfast cereal, vanilla sponge, desiccated coconut and buttered toast. On the palate come bright orchard fruits, baked apricots and peppery spice with gently charred oak and creamy vanilla. The finish is lasting sweetness tempered by persistent spice.
