This is Batch 3 of Bimber, an English single malt from the London distillery founded by Dariusz Plazewski and Ewelina Chruszczyk. It was distilled from 2017 and bottled in March 2021 at 51.6% ABV, with a run of 5,000 bottles.
The whisky matured in former bourbon barrels made from American white oak. It is neither chill-filtered nor coloured.
On the nose there is lemon zest, cumin, wholemeal bread with butter, malt bread and ginger. The palate offers caramel and a hint of dark chocolate, then apricot and lemon. The finish is long, with anise and white pepper wrapped in soft vanilla.
