Bimber – Ex-Port Cask No. 30 France Edition (70cl, 58.9%)

A single malt from Bimber, an independent craft distillery on the outskirts of London, matured in an ex-Port cask and bottled at 58.9% in a 70cl bottle. This is the France Edition, an outturn of 290 bottles. Bimber makes its whisky from local barley with traditional malting. Fermentation is spontaneous, in wooden vats built by the founder, Dairusz Plazewski. The stills are fired by hand with wood, only the best oak casks are selected, and the bottling is done by hand.
