Bimber – Ex-Rye Cask No. 216 France Edition (70cl, 58.9%)

This is a single malt from Bimber, an independent craft distillery on the outskirts of London, bottled from an ex-rye cask, number 216, as the France Edition. It is bottled at 58.9% in a 70cl bottle. Bimber works with local barley and traditional malting. Fermentation is spontaneous, in wooden vessels built by the distillery's founder, and the stills are fired by hand over a wood fire. Only the best oak casks are selected, and bottling is done by hand.
