Bimber – Harmony of Eight 8 Year Old (70cl, 50%)

Harmony of Eight is an 8 year old single malt from Bimber in West London, distilled in 2016 and bottled in 2024 at 50%. It matured in ex-bourbon and Pedro Ximénez sherry casks, which were vatted together only after the eight years. The ex-bourbon casks bring lively fruit and charred oak, while the PX casks add fuller fruitiness. The bottling ran to 1,090 bottles of 70cl. It is non-chill-filtered and natural colour. The nose has ripe strawberries and raspberries beside meringue, with mango, pineapple, gingerbread and fruit gums. The palate is smooth, with berries, tropical fruit, melted chocolate, nougat and hazelnuts, then cinnamon and light peppery oak. The finish is lasting, with fruit sweetness and oak.
