Bimber Santa's Edition 2023 is a single malt from the Bimber distillery in London, matured entirely in an ex-Cognac cask. It was bottled at 52.1% ABV, non-chill-filtered and with natural colour, and 570 bottles were filled.
The nose is sweet and fruity, with plums, marshmallows and fresh grape juice, and water brings out vanilla and caramel. On the palate the plums and grapes return alongside Jaffa Cakes, roasted almonds and home-made apple compote, with liquorice root, cacao and ground coffee appearing when water is added. The finish is long and syrupy, with molasses, apple syrup and dried sultanas.
