Bimber – Single Cask #544-7/67 Oloroso Sherry Finish (2020) (70cl, 51.5%)

This is a single cask English single malt from Bimber, the London distillery. It was matured in ex-bourbon casks, then finished in a 2010 vintage Oloroso sherry butt from the Spanish producer González Byass. 936 bottles were produced at 51.5% ABV. The spirit was made from barley grown on the distillery's single farm, malted at Warminster Maltings and fermented for seven days in American oak washbacks. The label artwork is inspired by the work of Dutch artist and sculptor Eelke van Willegen. The whisky is described as fruit-forward, with chocolate and malty, cereal notes.
