A single cask English single malt from Bimber, the London distillery, in its Spirit of the Underground series. This release celebrates Bond Street station and was matured in a single ex-bourbon cask, then filled into 278 bottles at 56.3% ABV in 70cl. It is non-chill-filtered and free from artificial colouring.
Bimber opened in Park Royal, west London, and grows its barley on a single farm, which it floor malts.
The nose combines bright tropical and stone fruits with malt loaf, vanilla cream, dark sugars and nougat. Pineapple and nectarine arrive on the palate, with burnt toffee, caramelised sugars, chocolate and black pepper. The finish is long, with toasted oak and peppery spice.
