Bimber – The Four Elements Release No.4 Water English Single Malt Whisky (70cl, 52.1%)

This is Water, Release No. 4 in Bimber's The Four Elements series, an English single malt from a London distillery. It comes from a single cask, and only 271 bottles were made. The cask was reduced in strength to show how dilution can bring out extra aromas and flavours and give the whisky a new balance. It is bottled at 52.1% in a 70cl bottle. The distillery draws its water from the Thames, and its long, high-ester fermentations shape the spirit. The nose combines pineapple, mango and lemon with toasted cereals, vanilla buttercream and ginger. On the palate come juicy pineapple, apple, pear, custard and toasted oak, dusted with cinnamon and ginger, and the finish is long, sweet and fruity.
