Boann – Single Pot Still Madeira Casks (70cl, 47%)

This is a single pot still whiskey from the family-run Boann Distillery in Ireland's Boyne Valley. The mash uses locally grown malted and unmalted barley, oats and rye. It first matured in heavily charred 200-litre ex-bourbon casks of American oak, then in Madeira Colheita casks from Justino's that held Tinta Negra, Boal and Sercial wines. Bottled at 47% in a 70cl bottle, it is not chill-filtered and has no added colouring. It belongs to a series of three single pot stills introduced in 2024. Apples and peaches lead the nose, with honey and toasted oak. The palate is velvety, with peach and cream, then vanilla, walnut and fruit cake. The finish is long, with lemon oil and savoury spice.
