Bodegas Tradición Amontillado VORS 30 Year Old

This is an old Amontillado sherry from Bodegas Tradición, made entirely from Palomino Fino. It begins as a fino and spends more than a decade under a layer of flor yeast before continuing to age oxidatively. VORS is the category for sherries averaging 30 years or older. It is bottled without cold filtration and without added caramel or sulphites. Mahogany in colour with copper glints, it is bottled in the traditional jerezana bottle, sealed with wax and hand numbered. The nose is complex, with maritime and salty notes, toasted almonds, Jamaican rum and smoked meat. The palate is completely dry, full of salt and umami, and the nutty finish is very long.
