A very old Pedro Ximénez sherry from Bodegas Tradición, classed VOS, which means an average age of 20 years or more. This one has spent 22 years on average in American oak. It is not cold filtered, and no caramel or sulphites are added.
It comes in the traditional jerezana bottle, sealed with wax and numbered by hand. The colour is very dark and dense.
The nose offers raisins, figs, plums, liquorice, sun-dried tomatoes and tar. The palate is thick and silky yet intense, with plenty of sweetness that stays light on its feet, and notes of coffee, liquorice, chocolate and toffee. Serve it lightly chilled, at about 14 degrees.
