This is a Cream sherry from Bodegas Tradicion, a VOS bottling with an average age of 20 years or more. It is blended from 70% very old Oloroso made from Palomino Fino and 30% young, fruity Pedro Ximenez, with 127 g/L of sugar. The sherry is neither cold filtered nor given caramel or sulphites.
The colour is light mahogany. The nose is rich with nutty aromas, figs, plums and raisins. The palate is dense and sweet without being heavy, with dried fruit and nuts. Serve at 10 to 16 degrees with desserts containing orange, chocolate or nuts.
