Boukman Botanical Rhum (75cl, 45%)

Boukman Botanical Rhum is a Haitian rhum in the clairin trampé tradition: a dry, unaged spirit from fresh sugar cane juice, infused with seven wild-foraged Haitian barks and botanicals. The cane comes from Croix des Bouquets in the south and the fields around Cap Haïtien in the north. It is named after Dutty Boukman. The infusion includes Bois Bandé, Campèche, bitter orange peel, allspice, clove and vanilla, with no added sugar, caramel colouring or molasses. The nose is floral and spicy, with clove, cinnamon, orange peel, honey and baked pear. The palate is plush and dry, with black pepper, chocolate, tropical fruit and key lime pie. The finish is long and crisp, with wood, cardamom and liquorice.
