Bushmills 21 Year Old is a single malt Irish whiskey from the Old Bushmills Distillery in County Antrim, Northern Ireland. It is made from unpeated malted barley, triple-distilled in copper pot stills, and bottled at 40% ABV (80 proof) in a 750ml decanter-style bottle. It is non-chill filtered and of natural colour.
The whiskey spends at least 19 years in ex-bourbon American oak barrels and Spanish Oloroso sherry butts. It is then married and finished for two years in first-fill Madeira casks.
The nose offers raisins, figs, dates, candied orange peel, honeyed malt, toffee and cedar. The palate is velvety, with dark chocolate, poached pears, pecans and baking spices. The finish is long and mellow, with pipe tobacco, dark fruit and roasted walnuts.
