This is a 13 year old Caol Ila, bottled independently by Thompson Brothers, an independent bottler based in Dornoch. It was matured in a rejuvenated ex-bourbon hogshead and bottled at 54.9% in a 70cl bottle. It is non-chill filtered and of natural colour.
The nose opens with a savoury, green sharpness of sliced jalapenos, green peppers, Spanish guindilla chillies, pickled walnuts and preserved lemon. Caol Ila's creamy sweetness follows, with soft banana, vanilla custard and condensed milk.
On the palate it is lively and smoky, with BBQ embers, smoked butter and oyster shells. The finish is long, warming and spicy, with smoke carrying through to herbal white vermouth and dry wood shavings.
