A peated Islay single malt from Caol Ila, released by Signatory Vintage as the Winter 2020 edition of its Single Cask Seasons series. It was distilled in May 2011, finished in a sherry butt and bottled in January 2021 at 52.6% ABV, after nine years. The outturn is 824 bottles of 70cl, non-chill-filtered and with no added colour.
On the nose, strong bonfire smoke meets dried plums, raisins and dates, with sweet vanilla, a trace of coffee and light spice. The palate opens with dark grapes, stewed apples and a little fig, then roasted nuts and unburnt tobacco. The finish is long, with English wine gums and smoke, followed by dry spice of liquorice, anise and nutmeg.
