Caol Ila – 25 Year Old 1995–2021 Barrel Selection (59.5%)

This Caol Ila is a single cask Islay single malt, distilled in 1995 and bottled in 2021 at 25 years old. Wilson & Morgan released it in their Barrel Selection at a cask strength of 59.5%. It matured in a refill Oloroso sherry butt, which yielded 232 bottles. This is the second bottling from that cask: the half bottled in 2020 came out at 59.8%, and evaporation brought this one down to 59.5%. Oloroso sherry, peat smoke, dark fruit, malt, salt and oak spice describe its profile.
