Caol Ila 25 Years Old is an Islay single malt matured for 25 years in ex-sherry casks, bottled at 53.2% ABV in a 70cl bottle. The outturn is 3,000 bottles.
It is made from Scottish barley grown on Islay's peaty soils, which the notes link to its pronounced smoky character.
The nose combines smoke, sea salt, citrus, vanilla, sherry, honey and spice. The palate brings peat and smoke with toffee, honey, dried fruit, spice and a touch of salt. The finish is long and smoky, with maritime notes.
