Just Hatched is a 3 year old single malt from Cardrona Distillery in the Cardrona Valley on New Zealand's South Island. It marks the first spirit from the distillery to become whisky, and it is made entirely from locally grown grain. A solera-style marriage of ex-bourbon and ex-Oloroso sherry casks, it is bottled at natural cask strength, 64.4% ABV, without dilution, in a 375ml decanter.
Tasting notes mention gingerbread, butterscotch and vanilla with some heat on the nose, honey, lemon tea and anise on the palate, and a finish of tobacco, stewed cherries and sea-salt dark chocolate.
