This is a barrel proof bourbon from Cedar Ridge Distillery in Swisher, Iowa, bottled at 58% ABV (116 proof) and non-chill filtered.
The mash bill is 74% corn, 14% malted rye and 12% malted barley. It is aged in char #3 American oak barrels in rickhouses without climate control, so the barrels go through Midwestern seasonal swings of more than 100 degrees Fahrenheit.
The nose brings corn sweetness, caramel, toasted oak and vanilla, with a little apple, pear and cinnamon-nutmeg spice. The palate is full-bodied, with brown sugar, dark chocolate, roasted corn, rye pepper, maple syrup and charred oak. The finish is long and warm, with oak tannin and baking spice.
