Centinela Silver Blanco Tequila (75cl, 38%)

Centinela Silver is an unaged blanco tequila made from 100% blue Weber agave in Arandas, in the Los Altos highlands of Jalisco. It is bottled at 38% in a 75cl bottle. The distillery uses estate-grown agave cooked slowly in traditional clay and brick ovens rather than stainless steel autoclaves, followed by natural fermentation. The producer credits the ovens with a subtle smokiness and natural sweetness. The nose is cooked agave and floral notes with a sweet, candied edge and a gentle herbaceous touch. The palate is thick and agave-led, moving to citrus, pepper, anise and vanilla. The finish is clean and warm, with pepper, light herbal dryness and a trace of sweet agave.
