This is a 6 year old single malt from Chain Pier, an experimental Edinburgh distillery that has now closed. It was chosen by independent bottler Tri Carragh and bottled at 58.9% ABV in a 70cl bottle, with 86 bottles released.
The spirit was distilled in 2019 and first aged in a PX hogshead. It then had a seven-month finish in a second-fill red wine octave.
The nose offers red berries, baked apples, blackcurrant cordial, vanilla cream and soft oak, with fresh sourdough and toasted malt. The palate moves from red fruit and sweet spice to Welsh rarebit, Worcestershire sauce and pickled jalapeño. The finish is long, with dark fruits, mature cheese and gentle spice.
