A sweet white Sauternes from Chateau de Fargues, from the 2016 harvest. It is made from Sémillon and Sauvignon Blanc, selected and hand-picked in several passes, with Botrytis cinerea. Fermentation and ageing take place partly in French oak barriques, giving subtle vanilla and sweet spice notes. The wine shows acacia honey, dried apricot, caramel and candied citrus. On the palate it balances sweetness with freshness and has a long, persistent finish. It suits foie gras, blue cheeses or fruit desserts.
