Chinaco Añejo Tequila (75cl, 40%)

Chinaco Añejo is a tequila made from 100% Blue Weber agave and aged for 30 months. It comes from Tequilera La Gonzaleña, the only distillery in Tamaulipas, Mexico. The agave hearts are roasted in autoclaves for 12 hours, pressed in an old sugarcane mill and fermented for 72 hours with yeasts cultivated since 1973. The spirit then rests in French and English white oak barrels and in American bourbon barrels. The nose combines roasted agave, ripe pear, wild flowers and woodsmoke, with vanilla and tropical fruit beneath. The palate is smooth and velvety, with dark chocolate, toffee, caramel, oak and baking spices. The finish is long, with smoke, warm spice and a return of earthy agave.
