Compass Box The Spice Tree (70cl, 46%)

The Spice Tree is a blended malt from Compass Box, made from single malts from three distilleries: Clynelish, Dailuaine and Teaninich, with the whisky around ten years old. It is bottled at 46%, with no artificial colouring and no chill-filtering. The first maturation takes place in first and second-fill American oak casks that held bourbon. The whisky then spends at least two years in new casks fitted with heavily toasted French oak ends, toasted at three different levels so the resulting whiskies can be blended for added complexity. The Spice Tree was first released in 2005, and the present method replaced the original inner-stave technique.
