A 10 year old single cask Highland Dalmore, distilled in 2013 and bottled by the Scotch Malt Whisky Society as cask 13.102 under the name Bubbling Brown Sugar. 207 bottles were produced. The whisky spent five years in an ex-bourbon barrel before moving into a first fill Spanish oak oloroso hogshead. The nose suggests brown sugar, chewy cookies and dense cakes, alongside macadamia nut olive oil. Neat, the palate shows fig with pickled chilli, walnuts and honey balsamic. With water it moves to blackout cake and a sweet, tangy note of chilli and spice.
