Deanston – 2002 Organic PX Finish 17 Years Old (70cl, 49.3%)

This is a 17-year-old Deanston single malt made with organically sourced barley and bottled at 49.3% in a 70cl bottle. The distillery stands in a former mill, and the first 14 years of maturation took place in refill casks inside its old weaving shed. The final years were spent in sherry casks, giving a Pedro Ximénez finish and a burnished copper colour. The nose is very dry and slightly sulphurous, with dried fruits, raisins and dates. The palate brings sweet caramel, maple syrup, candied peel and sherry-soaked raisins, and the long, sweet finish fades to honeyed cashews.
