A Franciacorta DOCG Brut Nature from Mirabella, made without added sulphites. It shows fine perlage and a bright straw colour, with subtle notes of white-fleshed fruit, citrus, white flowers, minerals and a light bread crust. The palate is slender, with balanced acidity and a persistent finish that favours clean flavour over sweetness. Serve well chilled in a flute or coupe; it suits an aperitif, lean fish, raw seafood, light vegetable dishes and soft fresh cheeses.
