Destileria Barako Gayuma Liqueur (70cl, 35%)

Gayuma is a Filipino herbal liqueur from Destileria Barako, named after the old Filipino word for a love charm or elixir. It is distilled from local botanicals, native herbs and Philippine cacao, and each batch is aged to a deep amber colour. The nose combines dark spices, caramel and tropical fruit with vanilla, cacao and herbs. On the palate, coffee, cacao nibs and spiced fruit come first, followed by anise, cinnamon and honey, with restrained sweetness and earthy, herbal warmth. The finish is long, warming and slightly smoky, with spice and oak. It can be served neat or over ice, or used in a spiced Old Fashioned or an Espresso Martini.
