Distillerie du Peyrat Organic Selection Cognac (70cl, 40%)

An organic cognac from Distillerie du Peyrat in the Cognac region of France. The blend is composed of relatively young cognacs, typically aged three to four years minimum, drawn mostly from the house's own vineyards in the Fins Bois cru near Grande Champagne. Distillation is in traditional Charentais pot stills and the eaux-de-vie are aged in Limousin French oak barrels. The house describes a soft, expressive nose of pear blossom, fresh peach, light tropical fruit, honeycomb and gentle vanilla. The palate is silky and rounded, with orchard fruit, white tea, honey and floral tones, plus restrained oak spice. The finish is clean and moderately long, with lingering fruit, soft spice and a gentle dry edge.
