Eden Mill – Sherry Cask (46%)

This is a Lowland single malt from Eden Mill, bottled at 46% ABV. It is non-chill-filtered and of natural colour, and it is one half of the distillery's new core range. The whisky is matured half in Oloroso and half in Pedro Ximénez sherry casks, which come from the Bodega José y Miguel Martín in Spain. These casks meet a sweet, grassy and floral new make. The nose offers dried fruit, mainly raisins and figs, with nutty tones and a little sweet oak spice. The palate is velvety and full, with sherry sweetness balanced by a gentle spicy warmth, plus dark chocolate, roasted almonds and a touch of lemon peel. The finish is long and smooth, with oak and a trace of vanilla.
