El Jolgorio Espadín Mezcal 2009 (75cl, 47%)

El Jolgorio Espadín is a mezcal made from 100% Espadín agave (Agave angustifolia), distilled in 2009 in Lachigui, Miahuatlán, Oaxaca. The agave is grown using organic practices. The agave is cooked in a conical earthen pit oven, milled with a small mechanical grinder using an axe and wooden mallet, and fermented naturally in open-air wooden tanks. Distillation is in a hybrid copper still with an external condenser. The mezcal then rested in glass for a minimum of three years before bottling. It avoids the volatility often found in mezcal, with citrus and tropical fruit, and sugar and acidity that keep it light on its feet.
