Fielden – Harvest 2019 Rye Whisky (50%)

Fielden Harvest 2019 is a rye whisky and the first edition in Fielden's annual Harvest series, created to show how individual growing seasons influence its heritage grains. The 2019 vintage is the year the grain was grown and harvested, after a dry, warm spring and a mild, wet summer. The mash was 73% rye, 18% wheat and 9% malted barley from Oxfordshire, Berkshire, Gloucestershire and Norfolk, double distilled in pot and column stills. It matured for a minimum of 38 months across nine casks: used American oak, American STR, Sauternes and Ramandolo. It was reduced to 50% ABV, and 2,680 bottles were produced. The nose has roses, herbs, fresh ginger and apricot. The palate is herbal, with summer fruits, brioche and apple crumble, and the finish is white pepper and fresh thyme.
